Cardamom Pasta Salad

1 package of udon noodles or whole wheat linguini
1/4 cup tamari soy sauce
1/4 cup extra virgin olive oil
1/4 cup sesame seeds
1 T. cardamom
sundried tomatoes
scallions
red pepper flakes
feta cheese

Boil the water for pasta to cook. Cook as directed and then rinse well under cold water. Sprinkle tamari on pasta and mix well with hands so that the tamari gets absorbed into all the pasta. Add more if desired.
Heat olive oil in a pan and toast sesame seeds until brown. Add the cardamom at the end and mix well.
Pour mixture over pasta and squeeze in with hands.

Cut desired amount of sundried tomatoes into small pieces and mix into pasta along with red pepper flakes to taste. Garnish with scallions and feta cheese. Let sit for a while to let flavors absorb into pasta and serve at room temperature. Can be chilled in refrigerator for up to 3 days.
